Wonder when the neighbours are back?

Olaf and Joker, our Dutch neighbours will be back around March, many holiday homes in this area have had problems with pipes bursting after the recent frosts, so I hope Olaf drained his pipes properly before he left last year. Hopefully as well Paul and Olaf will get on a little better as they had a few disagreements last year about noise. I love Jokers recipes, she introduced me to dates stuffed with blue cheese, try it, you wont be disappointed.
I also need to do a repair to the fence where the ponies broke through into Olafs garden, Pepito was helping Olaf cut his grass but Pablo got caught up in the fence, fortunately he didn't panic and stood still while we cut him free.

Lemon Cheese cake.

Recipe, 2 x 250gr Mascarponi cheese, packet of digestive or similar biscuits, butter, half a mug of sugar (my scales are broke) and a lemon, glass of red wine. Crush biscuits, I put them in a plastic bag and smashed with a tin of cat food, melt the butter, about 50gr, in a bowl I put the biscuits and added enough butter to bind them together, press this into a cake tin with a removable base, but a shallow quiche type tin, perhaps lined with grease proof paper would do, put this in the fridge for half hour to set, drink wine. Put cheese, sugar and the juice and zest of the lemon in to a bowl beat it to a thick creamy consistency, smooth over biscuit base, back in the fridge for about an hour to chill and set. Optional, grate chocolate over the cheesecake before serving. Simples.
